Shiozake, a beloved Japanese breakfast dish, is also known as Shake or salted salmon in English. This perfect combination of salted salmon and rice is a cozy and delicious way to start your morning. Try this traditional Japanese breakfast and make your mornings special!

Ingredients
  

  • 300 g salmon My salmon is 1 inch thick.
  • 15 g salt
  • 1 Tablespoon sake

Preparation

  • Prepare the salmon. I used this salmon.

  • First, add sake to every side of the salmon using your hands.
  • Then, add salt to the skin side and add the rest of the salt to the other side.
  • Cover with cling wrap tightly.
  • Put in the fridge for at least 5-6 hours.*1

Option 1 : Oven (I like this way)

  • Preheat your oven to 400℉(205℃).
  • Prepare a baking pan with parchment paper.
  • Bake for 15 minutes with the salmon skin side down.

Option 2 : Frying pan

  • In a medium frying pan, put down a sheet of aluminum foil and oil. Then add the salmon(s) on top. Turn the heat to medium.
  • First, cook the skin side until it looks crispy.
  • Then, turn the heat to medium low and cook for 6 minutes on each side.
  • After that, cover with a lid and cook another 3 minutes.

Let's eat

  • This is great with rice and miso soup! Great breakfast:)

Notes

*1 if you prefer lightly salted shake, do 5 hours. If you want more salt, then do 6 hours.
