Cut zucchini into 1/4 inch (about 5mm) thick pieces.
If shrimp is frozen, defrost completely. Then, remove tails and any shells.
In a medium bowl, add the shrimp and Katakuriko (or potato starch), then mix up. Then, rinse the starch off with cold running water. This process helps clean the shrimp.
Dry the shrimp using a paper towel completely.

In a medium pan, turn the heat to medium and add butter. When the pan gets warm, add garlic.
Add the shrimp to the pan and cook for about 2 minute on each side.
After the shrimp is completely cooked, add the zucchini, soy sauce, salt and black pepper. Cook for 2 minutes.
