Ingredients
  

  • 2 pack udon
  • 50 g bacon or ham
  • 1/4 large onion 1/4 is about 30-55 g (Change depending on how many Serving you set)
  • 2 large egg(s)
  • 200 ml whole milk
  • 2 Tablespoon parmesan cheese
  • 15 g unsalted butter
  • 1/2 teaspoon salt
  • 1 teaspoon dashi powder HERE to buy

topping (If you want)

  • large egg yolk
  • scallion (green onion)
  • freshly ground black pepper

Instructions
 

Preparation

  • In a medium pot, add enough water to cover the udon noodles. Turn the heat to medium and when the water boils, add udon noodles and cook for 1-2 minutes. Drain the water and run the cold water to cool the noodle down.
  • If you use bacon, bake the bacon first. I usually use my oven, set 400℉, then bake for 15-20 minutes. After baking, cool it down, and cut into the size you prefer.
  • In a small bowl, add egg and beat it.
  • Cut onion into thin sliced pieces.

Let's cook!

  • Use a medium pan, and turn the heat to medium. Add butter and when the butter is beginning to melt, add the onion.
  • When the onion gets softer and clear in color, add the bacon (or ham) to the pan. Cook for 1 minute.
  • Add milk into the pan and bring it to a boil. When it starts boiling, turn the heat off once.
  • Add the beaten egg, parmesan cheese, salt and dashi powder. Mix everything.
  • Turn the heat back on and set to low. Add the udon noodles. Mix everything.

Let's eat!

  • Move it to a bowl, and add some toppings. I like to add egg yolk, green onion and black pepper to finish!
