- 2 pack udon
- 50 g bacon or ham
- 1/4 large onion 1/4 is about 30-55 g (Change depending on how many Serving you set)
- 2 large egg(s)
- 200 ml whole milk
- 2 Tablespoon parmesan cheese
- 15 g unsalted butter
- 1/2 teaspoon salt
- 1 teaspoon dashi powder HERE to buy
topping (If you want)
- large egg yolk
- scallion (green onion)
- freshly ground black pepper
Preparation
In a medium pot, add enough water to cover the udon noodles. Turn the heat to medium and when the water boils, add udon noodles and cook for 1-2 minutes. Drain the water and run the cold water to cool the noodle down.
If you use bacon, bake the bacon first. I usually use my oven, set 400℉, then bake for 15-20 minutes. After baking, cool it down, and cut into the size you prefer.
In a small bowl, add egg and beat it.
Cut onion into thin sliced pieces.
Let's cook!
Use a medium pan, and turn the heat to medium. Add butter and when the butter is beginning to melt, add the onion.
When the onion gets softer and clear in color, add the bacon (or ham) to the pan. Cook for 1 minute.
Add milk into the pan and bring it to a boil. When it starts boiling, turn the heat off once.
Add the beaten egg, parmesan cheese, salt and dashi powder. Mix everything.
Turn the heat back on and set to low. Add the udon noodles. Mix everything.
