Have you heard of Abura Soba? My first encounter with this remarkable noodle dish was during my college days. While I had always known about Abura Soba, I tended to order regular ramen. However, when I finally tasted Abura Soba, it was nothing short of mind-blowing!

What is Abura Soba

Abura Soba, a traditional noodle dish that has been enjoyed in Tokyo for decades, stands out as a unique ramen variation. Unlike its soup-based counterparts, Abura Soba doesn’t rely on broth. Instead, it features warm noodles coated in a flavorful soy sauce-based mixture, often enriched with oils like sesame oil. A delightful finishing touch involves drizzling vinegar or chili oil over this delectable creation.

The Origin of Abura Soba

There are two prevailing theories regarding the origins of Abura Soba. One theory suggests that it was first introduced near Hitotsubashi University (一橋大学) in Kunitachi City around 1950. The other theory posits that it originated at a shop near Asia University (亜細亜大学) in Musashino City during the 1950s. Despite their differing origins, both versions of Abura Soba share a common thread: they emerged from university settings and spread throughout the Musashino area.

Abura Soba, beloved by students, is known for its affordability and generous portion size. Legend has it that when freshmen entered Asia University, senior students would traditionally treat them to Abura Soba as part of an initiation ritual. This dish has captured the hearts and palates of many, not only among Tokyo’s university students but also among numerous working professionals.

What is The Difference Between Abura Soba and Maze Soba

Abura Soba and Maze Soba, both originating from Tokyo, have gained immense popularity in Japan. These noodle dishes, known for their unique characteristics, have led to the establishment of specialized restaurants dedicated to each. Unlike ramen, Abura Soba and Maze Soba are unique Japanese noodle dishes that do not have soup. These flavorful creations fall under the category of easy Chinese noodle dishes. Initially, Abura Soba was referred to as Maze Soba, but as time passed, these two noodle dishes gained distinct recognition.

The primary distinction between Abura Soba and Maze Soba lies in their toppings. Abura Soba is intentionally simple, allowing the true flavor of the noodles to shine. Common toppings for Abura Soba include menma, chashu, green onions, ramen eggs, and dried seaweed. In contrast, Maze Soba is a versatile dish that invites exploration with a wide array of toppings and flavor combinations.

Ingredients
  

  • 1 packs ramen noodles HERE is to buy
  • 1/2 Tablespoon oyster sauce HERE to buy
  • 1/2 Tablespoon soy sauce HERE to buy
  • 1/4 Tablespoon sesame oil HERE to buy
  • 1/2 teaspoon torigara soup base HERE to buy
  • 1/2 teaspoon rice vinegar Here to buy
  • 1/2 teaspoon sugar

Topping options

  • scallion (green onion)
  • boiled eggs
  • nori (dry seaweed)
  • white sesame seeds

Instructions
 

Preparation

  • If you want to add some toppings at the end, make them before making Abura Soba! Keep in mind that Ramen eggs take time to prepare, so please follow the article to make them first.
  • Prepare the Chinese noodles first. In a pot, add water and bring it to a boil. Once the water is boiling, add the Chinese noodles. Cook until the noodles are tender and softened.
    Drain the water using a strainer. Remove as much water as possible.

Let's make!

  • In a deep bowl, add oyster sauce, soy sauce, sesame oil, torigara soup base, rice vinegar, and sugar. Mix everything well until the sugar melts.
  • Add the noodles and mix until the sauce and the noodles are well combined. If there’s any extra sauce, you can toss it.

Let's eat!

  • Add some toppings on top of the noodles! It’s a super easy meal to make.
