This milky delicious side dish is called Ebi Mayo and it can be your addiction! I am a big fan of shrimp and I can’t stop eating this side dish by itself or with rice!
What is Ebi Mayo
Ebi means shrimp and Mayo means mayonnaise. The sauce is based on mayonnaise with added milk, ketchup, and some ingredients. Just like Ebi Chili, it is made by covering with the sauce and super easy to make! The mayonnaise-based sweet seasoning is especially popular with children.
The popular shrimp side dish Ebi Chili is a Chinese food that was made to suite Japanese taste, but Ebi Mayo was born in Japan and not found in authentic Chinese food.
How to Prepare Shrimp Before Using
I always use Costco’s tail-on peeled raw shrimp for this recipe. Depending on which shrimp you use but here is the step of how to prepare for Ebi Mayo.
- Defrost the shrimps in a bowl of water.
- After defrosting, remove tail and vein.
- Then, add the shrimp and Katakuriko (potato starch) to a bowl. Mix thoroughly.
- Add water to the bowl and mix, then rinse with water again. Repeat until the water stays clear.
- Place the shrimp on a paper towel to remove excess water completely.
These are the steps to prepare the shrimp before using them. Katakuriko helps clean the shrimps.

- whole milk

For the best results, I recommend using Japanese mayonnaise instead of other varieties. You can find Japanese mayonnaise on Amazon, but all the other ingredients can be purchased at your local grocery store.

Ingredients
- 200 g shrimp
- 1 Tablespoon potato starch or Katakuriko for covering

- 1/3 teaspoon salt
- 1/3 teaspoon freshly ground black pepper
- 1/2 Tablespoon sake
Sauce
- 1 Tablespoon whole milk
- 2 Tablespoon Japanese mayonnaise HERE to buy
- 2 Tablespoon ketchup
- 1/2 Tablespoon sugar
- 1 scallion (green onion)
Instructions
Preparation
- Cleaning Shrimp – After removing the tail and vein from the shrimp, place the shrimp in a bowl and add approximately 1 tablespoon of potato starch (or Katakuriko). Mix well. Then, rinse thoroughly until the water becomes clear. Finally, use a paper towel to remove any excess water.
Let's make sauce
- Cut green onion into small pieces.
- In a bowl, combine the green onion, whole milk, Japanese mayonnaise, ketchup, and sugar. Mix thoroughly.
Let's cook Shrimp!
- In a bowl, add the dried shrimp, salt, black pepper, and sake. Mix well.
- Add potato starch (or Katakuriko) into the bowl. Mix well.
- In a pan, set the heat to medium-low and add a thin layer of oil. Place the marinated shrimps in the pan and cook both sides until the shrimp turn pink. This should take approximately 2-3 minutes per side.
Let's mix up!
- Transfer all the cooked shrimps into the sauce bowl and mix them thoroughly.
Let's eat!
