What is Udon Carbonara
Udon Carbonara is a Carbonara dish that uses Udon noodles. Udon noodles are a thick Japanese noodle that are loved by so many people not only in Japan but also worldwide nowadays. Carbonara is an Italian pasta dish typically made using spaghetti so some of you may think this is unusual but just try it and you’ll be surprised!
This is a great dish that you can make in less than 30 minutes!

- udon noodles
- whole milk
- dashi powder
- salt
- butter
- parmesan cheese
- egg
- onion
- ham or bacon

Carbonara Udon
Ingredients
- 2 pack udon
- 50 g bacon or ham
- 1/4 large onion 1/4 is about 30-55 g (Change depending on how many Serving you set)
- 2 large egg(s)
- 200 ml whole milk
- 2 Tablespoon parmesan cheese
- 15 g unsalted butter
- 1/2 teaspoon salt
- 1 teaspoon dashi powder HERE to buy
topping (If you want)
- large egg yolk
- scallion (green onion)
- freshly ground black pepper
Instructions
Preparation
- In a medium pot, add enough water to cover the udon noodles. Turn the heat to medium and when the water boils, add udon noodles and cook for 1-2 minutes. Drain the water and run the cold water to cool the noodle down.
- If you use bacon, bake the bacon first. I usually use my oven, set 400℉, then bake for 15-20 minutes. After baking, cool it down, and cut into the size you prefer.
- In a small bowl, add egg and beat it.
- Cut onion into thin sliced pieces.
Let's cook!
- Use a medium pan, and turn the heat to medium. Add butter and when the butter is beginning to melt, add the onion.
- When the onion gets softer and clear in color, add the bacon (or ham) to the pan. Cook for 1 minute.
- Add milk into the pan and bring it to a boil. When it starts boiling, turn the heat off once.
- Add the beaten egg, parmesan cheese, salt and dashi powder. Mix everything.
- Turn the heat back on and set to low. Add the udon noodles. Mix everything.
Let's eat!
- Move it to a bowl, and add some toppings. I like to add egg yolk, green onion and black pepper to finish!
