Are you looking for a delicious fall dish that is super easy to make? I want to introduce sake takikomi gohan, a Japanese mixed rice recipe with salmon and mushrooms that is made by just adding all the ingredients into a rice cooker and letting it cook.

What is Takikomi Gohan

Takikomi gohan, also known as gomoku gohan (五目ご飯) or kayaku-meshi (加薬ご飯) in the Kansai region, is a popular Japanese rice dish that features a variety of ingredients cooked together with rice. There are countless Takikomi Gohan recipes, but the basic seasonings are salt, soy sauce, sake, and dashi stock. Depending on the season, you can enjoy this dish with different ingredients, such as mushrooms, fish, or fall vegetables in autumn. One of the benefits of cooking all the ingredients with rice is that the rice absorbs all the flavors and becomes more delicious. Takikomi Gohan is a perfect dish to serve with other side dishes, or to pack as an ekiben (駅弁), which is a bento box sold at train stations in Japan.

If you add uncooked salmon to your rice cooker directly, the salmon might retain an unpleasant fishy smell. Therefore, before adding the salmon to the rice cooker, please follow these steps.

  1. remove any skin or bones from the uncooked salmon
  2. in a microwave safe bowl, add the salmon and sake
  3. cover with cling wrap lightly
  4. microwave for 3 minutes
  5. open the cling wrap and let it cool down

Ingredients
  

  • 2 cup uncooked Japanese rice
  • 1 1/2 cup water
  • 150 g salmon uncooked salmon
  • 100 g shiitake mushroom
  • 2 Tablespoon sake for salmon
  • 2 Tablespoon soy sauce HERE to buy
  • 1 Tablespoon mirin HERE to buy
  • 1 Tablespoon sake HERE to buy
  • 2 teaspoon dashi powder HERE to buy

  • scallion (green onion)
  • soy sauce

Instructions
 

preparation

  • if salmon has skin or bones, remove them. Then move the salmon and sake to a microwave safe bowl. Cover with cling wrap lightly and microwave for 3 minutes.*1
  • After microwaving, remove the sake from the salmon. You can use a paper towel and pat to extract sake as much as possible.

Let's cook!

  • Wash shiitake mushrooms and discard the stems of the shiitake mushrooms, then thinly slice the caps.
  • Wash rice and move to a rice cooker. Add water, soy sauce, mirin, sake, and dashi powder. Then add the salmon and shiitake mushrooms on top.
  • Close the rice cooker and start cooking.

Let's eat!

  • After done cooking, open the rice cooker and mix everything. Serve to a bowl and add your favorite toppings such as green onion, salt, or soy sauce!

*1 This step is for removing the fish odd smell.
