I love bento box. It’s like opening a treasure box. One of my or so many Japanese people’s favorite bento is Soboro. It is made of seasoned ground chicken and scrambled eggs. Sounds too simple and boring but trust me, this is an another great meal. We eat usually eat Soboro in a bento, but it’s always amazing. You can make ‘Soboro don’ and eat it for lunch or dinner time at home.

If you use sake for both egg and chicken, it makes softer, gives you rich Umami flavor, and gloss. The taste is different than you don’t use sake. So I recommend you to use it!

Soboro Don
Ingredients
- 150 g uncooked Japanese rice This is an article about rice
- 200 ml water to make rice
For ground chicken
- 150 g ground chicken
- 1 Tablespoon sake
- 1/2 Tablespoon sugar
- 1 Tablespoon soy sauce
- 1/2 teaspoon minced ginger
For eggs
- 2 large egg(s)
- 1 Tablespoon sake
- 1 teaspoon sugar
- 1/4 teaspoon salt
Topping (Optional)
- peas
- spinach
Instructions
Preparation
- Add uncooked rice to your rice cooker. Wash the rice 1-2 times with running water.
- Use a mesh strainer to remove the water and move the washed rice to your rice cooker.
- Add water and let's cook the rice!
Let's cook – after rice is cooked
- In a small sized pan or pot, turn the heat to medium. Add a thin layer of vegetable oil and ground chicken and cook until it is cooked completely.
- Add sake, sugar, and soy sauce. Cook for 3-4 minutes or until no longer liquid. Then turn the heat off, and move it to a plate or bowl for now.
- Add eggs, sake, and sugar in a medium bowl. Mix everything well.
- Use a different pan or clean the pan, Turn the heat to medium-low, and add the mixture. Cook while mixing like making small piece of scrabble eggs.
- Add salt and mix. Turn the heat off, and move it to a plate or bowl for now.
Let's eat!
- In a bento or bowl, add the cooked rice first and then put the ground chicken on the side and the scrambled eggs on the other side. If you want, add some green vegetables! I added peas for a nice touch 🙂
