Sweet and savory ground chicken with scrambled eggs called ‘Soboro’ is a famous dish for Japanese bento (lunch box). If you go to a 7-eleven in Japan, in the obento section, there is always Soboro bento box.
I love bento box. It’s like opening a treasure box. One of my or so many Japanese people’s favorite bento is Soboro. It is made of seasoned ground chicken and scrambled eggs. Sounds too simple and boring but trust me, this is an another great meal. We eat usually eat Soboro in a bento, but it’s always amazing. You can make ‘Soboro don’ and eat it for lunch or dinner time at home.

Soboro Don
Ingredients
- 350 g cooked rice HERE is how to make rice
For ground chicken
- 150 g ground chicken
- 1 Tablespoon mirin
- 1 Tablespoon sake
- ½ Tablespoon sugar
- 1 ½ Tablespoon soy sauce
For eggs
- 2 teaspooon vegetable oil
- 2 eggs
- 1 Tablespoon sake
- 1 teaspoon sugar
- 1 Tablespoon mirin
- ¼ teaspoon salt
Topping
- peas Optional

- Ground Chicken : In a small sized pan or pot, turn the heat to medium. Add ground chicken, mirin, sake, sugar, and soy sauce. Cook the ground chicken, stirring constantly, until it's completely cooked.
- Eggs : Beat the eggs in a medium bowl.
- Eggs : Use a different pan or clean the pan. Turn the heat to medium-low, and add eggs, sake, sugar, mirin, and salt.
- Eggs : Stir the eggs to break into the smaller pieces. Cook the eggs until they are completely cooked.
- In a bento or bowl, add rice first and then put the ground chicken on the side and the scrambled eggs on the other side. If you want, add some green vegetables! I added peas for a nice touch 🙂
